If you want to slow ripening process the most you can, leave them in the refrigerator. Outside the refrigerator they will ripen at a normal pace, say 5 to 8 days from green to black. If you want them to ripen fast, leave them in the warmest area of your house, wrapped in paper, such as newspaper or paper bags. Once ripened, place them in the refrigerator, where they will last several days too...
