Also, once you make the dough you can cover it with saran wrap and put it in the refrigerator. This will harden the dough and make it more moldable. The color of the plantain shows how ripe it is. The harder/less ripe the plantain the yellower it will be. I used plantains that were mature but not fully ripe, so they were lighter in color. Yellow or &quot;whiteish&quot; they will still taste good with this recipe! Be positive you are almost there!
