SALSA VERDE WITH AVOCADO AND CHEESE
Salsa Verde con Aguacate y Queso Fresco
Makes about 2 cups

INGREDIENTS
1 lb tomatillos, husks removed and rinsed
1 garlic clove
1 or 2 chiles serranos (can adjust for desired spiciness level)
1/2 cup cilantro leaves
2 tbsp white onion, roughly chopped
1 1/2 tsp kosher or sea salt, or to taste
1/2 lb queso fresco diced, or can use farmer’s cheese or mild feta instead
1 ripe avocado, halved, pitted and sliced or cut into chunks
Warm corn tortillas or tortilla chips

TO PREPARE
Place tomatillos in a sauce pan and cover with water.  Bring to a simmer and cook until the tomatillos are soft and mushy, but not coming apart, about 10 minutes.

Place the tomatillos, garlic, chiles serranos (add one by one to taste for spiciness desired and adjust the heat as you go), cilantro, onion and salt in the blender.  Blend until smooth. You may also mash it all up in a molcajete.

Serve in a bowl or molcajete, along with the queso fresco and avocado slices.  Offer warm corn tortillas or tortilla chips on the side.

This salsa may be used to spoon on top of thousands of things; including tacos, quesadillas, eggs in the morning, or grilled meats.

I love tomatillos. Wonderful recipe. :)

I teach and we celebrated Cinco de Mayo today, 5/6/11. I made this salsa and served it with avocado and the cheese. It was fabulous! And it was easy to make with a food processor. The complimentary flavors of the salsa, avocado and cheese is perfect. Thanks!

Sorry. As a teacher I need to fix my mistake – “The complimentary flavors of the salsa, avocado and cheese ARE perfect!

My husband and I ran across your show yesterday and FELL IN LOVE with everything about it! We went to your website to get recipes and this is the first thing we’ve tried! DELICIOUS!

What a great show, love the food, just like the food I eat 70 years ago in Tamaulipas. Pati is great. I hope she write a cook book. So clear and easy

Hola Henrie, Thank you for your kind words. I am actually working on a cookbook now that will be out in 2012!

I am absolutely addicted to salsa verde now. I thought I tried it once a long time ago and liked it so I decided to make the recipe (without the queso or avocado). I dip chips in it, smother my bean & cheese chimi in it, and even dip my string cheese in it. My last batch I couldn’t find the serrano chile I purchased so I didn’t use it and I think it turned out even better! Can’t wait to get your cookbook! Thanks for the great recipes!!

Thank you so much and enjoy that Salsa Verde!

Love your show, you do a fantastic job showing how to prepare your awesom receipts thank you

Gracias, Karen! Thank you for watching. I hope you try some of the recipes!

I love this recipe. my sister who hates cheese and avocados loved it as well
i crumbled the cheese and put both the cheese and avocados in so my sister and brother who hates avicados as well wouldnt know.
i made this for my whole family and it was something everyone could eat and enjoy even though it had cheese and avacados.
i’ve also add a few time when we want somthing diffrent a red and yellow bellpeper and a cucumber and it tasted great.
LOVE you show and the foods you make.

Thank you so much, Jesalyn! It sounds like you will have them coming around to avocados in no time.
