LIME-RUBBED CHICKEN TACOS WITH CORN GUACAMOLE
Tacos de pollo con guacamole con elote
Serves 6 to 8

INGREDIENTS
Chicken Ingredients:
1 1/2 pounds boneless chicken breasts
2 tablespoons fresh-squeezed lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper, or to taste
1 tablespoon chopped fresh rosemary, or 1/4 teaspoon dried

Corn Guacamole Ingredients:
2 large ripe Mexican avocados, halved, pitted and diced
1 jalapeño chile, roasted, chopped, or to taste
2 garlic cloves, roasted with the skin on, peeled and minced
3/4 cup corn kernels, shaved from corn, or cooked from thawed
3/4 cup cherry or grape tomatoes, halved or chopped
1 tablespoon fresh-squeezed lime juice
3/4 teaspoon kosher or sea salt, or to taste

To assemble Tacos:
10-12 corn tortillas, homemade or store-bought

TO PREPARE
To make the Chicken:
Mix the lime juice with the olive oil, 1/2 teaspoon salt, 1/4 teaspoon ground pepper and rosemary in a bowl. Pour on top of the chicken, in a container. Cover and refrigerate anywhere from 1/2 hour up to 12 hours.

Heat a medium-sized sauté or grill pan over medium-high heat. Add corn or safflower oil; once it is hot but not smoking, add the chicken. Sauté until golden brown and cooked through, about 5 minutes per side. Remove from the pan, place on chopping board to cool. When cool enough to handle, slice into diagonal strips about a 1/2-inch wide.

To make the Guacamole:
Place the jalapeño and garlic cloves in a small baking dish under the broiler, for 6 to 9 minutes, until completely cooked through, soft and skin is charred. Once cool enough to handle, peel garlic and mince along with chiles.

Place diced avocado in a mixing bowl. Add the charred and minced garlic and jalapeños, gently tossing everything together well. Incorporate the corn and tomatoes. Squeeze the lime juice on top and sprinkle the salt. Mix it all together.

To assemble Tacos:
In an already hot skillet or comal set over medium-low heat, heat the tortillas. It will take about 1 minute per side.

Place the tortillas in a tortilla warmer or wrap them in a clean kitchen towel or cloth napkin. Serve them together with the guacamole and the chicken at the table and assemble your tacos!

My wife and I have just started watching Patti’s Mexican Table and love her. What a great TV presence and of course, the recipes are great. We are going to make the Bricklayer-Style Beef Tacos this evening.

We look forward to watching more of Patti’s shows and her charming persona.

Regards,

David & Kathleen Sciascia

Hola David & Kathleen, Thank you so much for watching and for your gracious comments! Please let me know how your tacos turn out and if you try anything else! All the best to you both.

Taco episode: how do you “char” the garlic? In the skin? Under the broiler? Both?
Love your show. Love Mexican food. Love you. You are today’s answer to Diana Kennedy.
Muchisimas gracias! Beto

Hola Beto, You char the garlic with the jalapenos in a small baking dish under the broiler. Yes, leave the skin on. When it cools down, you’ll just peel off the skin. Thank you so much for your comments. I am a huge fan of Diana Kennedy!

I made this last night for dinner and it was a hit! The chicken was really flavorful and the corn guacamole was light and fresh. I made the recipe for two of us and it was plenty. If I were to make it for 4 people I would add maybe a half pound more chicken and double the guacamole. I will definitely make this again. Pati, we love your show. I can’t wait till your cookbook comes out!

Hola Emily, Thank you for writing me about making the chicken tacos! Your amounts for four people sound perfect. Also, please get a copy of my cookbook!!

Pati suggested I try the lime rubbed chicken tacos… I think on facebook.. I made them tonight and now I think I want to eat them everyday! They are so good. I love them !! Thank you Pati for suggesting them. Im a fan… I will need to get the cookbook!

My husband and I are Irish and Iranian, respectively, but eat Mexican food 3 or 4 nights a week. We are definitely ready for some new recipes. Dear Patty,

I’m so glad I found your show on Create. I love you’re recipes and am egar to try them all. Some remind me of my grandmother’s cooking when I was a child but I have to admit the Lime Rubbed Chicken is my family’s favorite! Thank you so much for reminding me of our culture cuisines. I had forgotten so much and because of you I can now cook those dishes for my family that I had in abuelita’s kitchen. Again many, many thanks!

Best Wishes,
Denise

Hola Denise, Thank you for taking time to write me. Your abuelita sounds like a lovely woman! I am so happy my recipes bring back a sense of her cooking! All my very best to you and your family.

I just discovered your show on create last weekend. Loved the lime-rubbed chicken tacos! Our toddler loved the chicken when it was wrapped in a tortilla. It’s great to have recipes that make kids and adults happy. Can’t wait to try more of your recipes and catch more episodes!

Thanks Becky! So happy you and your family liked them: that´s what I aim to do, food that makes all ages happy :)

My pleasure Colette!

Ok, I think I am addicted.. I have made them again and can’t wait to make them and grill the garlic, chili and chicken.. I am sure they will taste even better. I had some Grapefruit margaritas with my tacos tonight.. MMMM.

Thank you for this gift of a recipe. First recipe of yours I’ve tried and it was a hit for dinner with my 2 year old and 4 year old. Saw it on an episode I DVR’d last night… tried it today. Just ordered your book – look forward to bringing Mexican flavors home! Also, this was very manageable to execute for a non-chef like myself.

Hola! I’m happy your kids enjoyed the lime-rubbed tacos!! Thank you so, so very much for ordering my cookbook. Please let me know if you ever have questions about a recipe.

Today, was the first time I saw Pati’s Mexican Table, I am trying to cook lime-rubbed chicken, but I made a mistake instead jalapeños I bougth habanero. That’s affect the recipe?

That’s gonna be more spicy!

Pati,
My husband and I love your show! After watching the taco episode, I decided to make the Lime Rubbed Chicken Tacos with the Corn Guacamole, and it was an absolute hit with my family! My youngest son can be a picky eater, and he ate four tacos! My family especially loves the Corn Guacamole, and I made it again here recently to go with Puerco Pibil. Thank you so much for putting together a show about real Mexican food with delicious recipes that are so easy to do, and work great for people on a budget. You’re a real gem Pati!

Thank you so, so much, Misty!!

So glad I happened on the show. the food looks yummy, the host is accomplished, and I can’t wait to try these recipes and will be looking to buy her recipe book.
had spent 4 fishing trips in a remote Mexican village a couple years ago and SO enjoyed the food … this takes me back there and shows me how to do it!

Delighted to hear that!

We saw Pati’s show for the first time yesterday and my daughters and I loved it! We loved the simplicity of the recipes and the way Pati carried the show. We don’t watch a lot of TV but Pati’s show is now in our short list of worthy TV. El calor latino se desborda por la patella :-)

Gracias Ximena por su lindo mensaje! So glad you and yoru daughters enjoy it. Keep tuned in, working on more episodes….

My husband and I made this for dinner last night, and it was amazing! The corn guacamole was terrific, especially with the broiled garlic and jalapeno – packed with flavor. The reason I am posting this is that we are vegetarian, and we made the recipe as is except with a chicken substitute (we used Quorn, but we also like Morningstar and Boca) and it turned out wonderfully. So, to those vegetarians who eat meat substitutes out there, make this recipe, you will enjoy it!

Also, I had only used flour tortillas and hard corn taco shells before for tacos at home, but Pati’s explanation of the difference in taste and sweetness of flour and corn tortillas spurred me to try corn tortillas at home. I used my skillet and heated them just as described, and WOW what a difference in taste! They were great and I plan to use them a lot more in the future.

Finally, I want to thank you, Pati, for showing us that we can make great tasting tacos without the addition of cheese or sour cream. I will be trying many more of your recipes.

Hola Cat, Thank you so much for your lovely message! I’m thrilled that you made your own corn tortillas!! I’m glad you are improvising with making the recipes vegetarian. I hope you find many more to try…
