Dulce de Leche CheesecakePay de Queso con Dulce De Leche

Serves: 12

Pay de Queso con Dulce De Leche " alt="Dulce de Leche CheesecakePay de Queso con Dulce De Leche " />

Ingredients

For the crust:

1 1/2 cups finely ground Maria cookies, vanilla wafers or graham crackers

6 tablespoons unsalted butter, melted, plus more for greasing the pan

For the cream cheese filling:

1 pound cream cheese, at room temperature

1 14-ounce can La Lechera sweetened condensed milk

3 large eggs, at room temperature

For the dulce de leche topping:

1 1/2 cups sour cream

1 14-ounce can La Lechera dulce de leche

1 cup chopped pecans

To Prepare

Butter a 9- to 10-inch springform pan and set aside.

To make the crust: In a large bowl combine the ground cookies and melted butter until thoroughly mixed. Turn the cookie mixture into the springform pan. With your fingers, pat it evenly around the bottom of the pan, gently pushing it up the sides to make a crust 1/2- to 1-inch tall. Refrigerate while you make the cream cheese filling and dulce de leche topping.

To make cream cheese filling: Place the cream cheese in the bowl of an electric mixer and beat at medium speed until smooth and light, 3 to 4 minutes. Add the sweetened condensed milk and continue beating until well mixed, scraping down the bowl as needed. Add the eggs one at a time, again scraping down the bowl as needed, and continue beating until the mixture is well blended and smooth, set aside.

To make the dulce de leche topping: In a medium bowl, mix the sour cream with the dulce de leche until combined.

Adjust the oven rack to the lower third of the oven and preheat to 350°F.

Remove the springform pan from the refrigerator. Gently spread the cream cheese filling evenly, trying not to distress the crust. Place the cheesecake in the oven and bake for 35 minutes, or until it is set and the top is lightly browned. Remove from the oven and let cool for at least 10 minutes before you add the dulce de leche topping.

Spoon the dulce de leche topping over the cream cheese filling, add the pecans all around the edge and place the pan back in the oven for 10 more minutes. Remove from the oven and let the cheesecake cool to room temperature. Cover and refrigerate for at least 4 hours before serving. It tastes even better if it chills overnight.

Before serving, run the tip of a wet knife around the edge of the pan to release the cheesecake. Remove the ring, then slice and serve the cake.

How do I find/make dulce de leche?

Hi Wanda-I found the Dulce De Leche in the international section of my grocery store. If your store doesn’t carry it you can go to YouTube where they have tutorials on how to make Dulce de Leche or you can order it through Amazon. I will say I tried to make it following the YouTube tutorial and found it to be quite messy and time consuming. I hope you’re able to find it at your store. Happy baking!

Lisa,
Just made my first batch of dulce de leche in the oven. Easy, no mess, little work and I can’t stop eating it. Google “dulce de leche oven method”. If I can do it anyone can. Takes about 1.5 hours of baking.

Saw this yesterday. Having the cheesecake tonight. YUMMM

Love Patis enthusiasm and LOVE seeing her boys on the show. Am going to make the cheesecake pretty soon. Know it will be good!

June 10 and this will be his birthday cake. Can’t wait, but
meanwhile I’ll make another for a family gathering.

Hi, My Names Cindy I Just Made This Cheesecake But My Batter Was A Lil Runny But I Don’t Know If That’s Normal Or Not? And I Got LilLTiny Lumps Of Cream Cheese In My Batter Too.

It should be a little runny, and the clumps may have been from the cream cheese being too could, or maybe you needed to mix it a bit more??

Tengo un frasco de cajeta quemada hecha de leche de cabra. Se puede utilizar? Cual es la diferencia entre cajeta y dulce de leche?

I have a jar of “cajeta quemada” made of goat’s milk. Can I use that instead of the dulce de leche? What is the difference?

Yes, of course. Dulce de Leche tends to be lighter, cajeta a bit more intricate. Both will work phenomenally well.

Hi Pati, I saw this episode and I just have to say I loved all your wonderful recipes!! They were so easy to make and my family just loved it!! Especially the cheesecake! Always look forward to watching your show!! :)

Thank you!!

me encanto tu show , estoy en duda de la tercera capa de el cheesecake , por cuanto timpo va al horno , he tratado de ver el video otra vez pero no dice, si por favor me aclaras esto. gracias , Doris

Aqui mismo esta la receta, Doris!

Patti I love your show and the way you introduce your food they always look so yummy. The new episode are more outgoing and we see more of México and your family, beautiful! I have five monsters of my own, we love the trees leche cake and its so easy to make. My next one will be duelce de leche cheesecake for fathers day, I’m sure its going to be the second best favorite. Thank you Patti, blessing Ana

Hi Ana, So happy you like the new season, I like it much better than the past ones too! Delighted to hear the Dulce de Leche cheesecake will have a repeated appearance at your table… Hope it stays as a keeper!

Never mind! I didn’t read the recipe closely and only saw La Lechera in the ingredient list and did not realize it CLEARLY states sweetened condensed milk! My bad.

Hi Pati. Just saw the show in which you made this cheesecake and wanted to give it a try. However I noticed that the recipe on your website uses a can of La Lechera in the filling while on the show you use a can of sweetened condensed milk. Does it make much difference which one you use?

El postre se mira delicioso; espero cocinarlo pronto. Gracias Pati por tus recetas tan deliciosas.

Con mucho gusto, Cyntia!

Hola Pati!!!
My low carb diet went down the drain tonight. I saw this Dulce de Leche Cheese Cake recipe and made it with the help of my stepson, which is a “cheseecakeaholic” :o) Simply delicioso!!!!
Big fan of your recipe and your tv show.

Patty
Your recepie for the cheesecake is now a big success in Buenos Aires,
My cousin made it and loved it

Hi Pati!

We love your show in our house! I have been baking cheesecakes, recently, and am drooling over this one!! I have one question (a general baking question, which specifically relates to this recipe) before I bake this cheesecake.

If I use a 10 inch springform pan when baking a cheesecake, is there a difference in baking time?? Say, if I have a 9 inch pan recipe and want to use a 10 inch pan- would I cook it for less time? This recipe seems to have 9 or 10 inch pans as interchangeable, and I remember you using a 10-inch in the episode, but is there a difference in the cooking time that could possibly be noted on the recipe, for nervous bakers?

Thanks so much!!

Blessings,

Tamara

Hola Tamara, Thank you for watching & for your message! I hope you do try the dulce de leche cheesecake. Bake it for the 35 minutes as written in the recipe, making sure it is set and lightly browned on top before removing from the oven. For a nine-inch pan, it might take a couple minutes longer in the oven, but I would still check it at 35 minutes.

Pati….
After seeing this episode many times, I decided to finally make the cheesecake this weekend. It was fabulous!! And so easy….I think I put it in the fridge too soon because there were little pale spots on the top from condensation dripping. Other than that, it was not hard at all. I did have to cook mine longer to get it to set, but that’s probably just my oven.
Thanks so much for all you do…I enjoy your recipes and watching your program. Love seeing the different regions of Mexico.
Thanks for sharing!! :)

Thank you so much, Pam!!

I love your show and especially this dulce de leche cheesecake recipe. It was a hit at my annual taquiza party! Gracias!

Gracias a ti for making it, Luis!

Hi Pati!
I saw your show for the first time yesterday by chance, and I have to say I have been missing out!!
I have checked, and I am not able to catch your shows regularly, (due to cable provider) but I am grateful I can visit your site as often as I can.
24 hrs later and I have already made Nana Jose’s flourless recipe, my son tried it and immediately went back for seconds. I am thrilled. I am now at the cooling stages of this Deulce de leche recipe, and I can’t wait to try it tomorrow ( going to let it cool overnight as you suggested)!! I was unable to find La Lechera so I had to use what my nearest grocery store provided..(perhaps that’s why my recipe is not as “browned” as the pic? Next time I will definitely hunt down La Lechera dulce de leche.
I am already a huge fan, and can’t wait to try out more recipes!
Thank you for sharing your wonderful talent with us all!!!

Hola Sylvia, Thank you for writing! I am thrilled that you are already trying so many recipes so soon after you found the show!! For the La Lechera, you can put your zip code in this webpage to find out who carries it near you: http://www.elmejornido.com/en/store-locator

You make everything that looks complicated to make so easy and afforable! I didn’t have much expectation on my first attempt to make the cheesecake, but I was so surprised how good it turned out! I was going to buy a cheesecake from the Cheesecake Factory for a birthday party, but I’m saving my money and making this cheesecake instead. Thank you for a wonderful recipe!

This recipe was my first time ever making cheesecake… And I don’t think I’ll ever use another recipe!!! I think I’ve made it about five times and let’s just say it doesn’t last very long so I have to make sure to take my slice first :)

I saw you make this Dulce de Leche cheesecake and knew it was what I wanted for my birthday cake, even if it meant making it myself. It was amazing and easy! Thank you, Pati.

So happy you tried it, Juliet! Hope you had a wonderful birthday!!

saw your show & i’m a bit confused. the picture shows 3 layers (from bottom: crust, cheesecake, dulce de leche topping – correct?)in yesterday’s episode, you poured the dulce de leche mixture on TOP of the cooled & set cheesecake batter. you did NOT blend it in with the cheesecake batter. so why does the 2nd layer (presumably cheesecake) on this site look more like chocolate? & why is it so much thinner than the dulce de leche topping? i’d love to make this soon. please advise. thank you!! :)

Hola Billie, You are correct! The dulce de leche mixture is not mixed with the cheesecake batter. Follow the recipe as written & you will have 3 layers. I’m so happy you are making my recipe – hope you enjoy!!

Okay, I’m confused. If I follow the recipe as written, I will have 3 layers. From bottom to top: Crust, cheesecake, dulce.

However, the photo on this post shows it from bottom to top: crust, dulce, cheesecake.

Is it possible to make it as shown on the photo? Won’t the dulce layer break down in the oven while the cheesecake layer bakes?

Hola Carolina, Happy you want to try my recipe! If you follow the recipe as written, it should come out like the photo. That’s how it looks after it bakes.

Oh,I see what she means. There is a dark thin layer…as if the dulcet de Leche was spread thin, then the sour cream mix is on top of that. Never noticed that before. :)
