While much has been made of Mexico’s influence on American cuisine, this session aims to take a creative look at its converse. Sampling iconic dishes that represent the evolution and diversity of Mexican cooking in the US (Tex-Mex combo platter, anyone?), I cross the country for the best in Mex-American cuisine, from Los Angeles Taco Truck Style Tacos Acorazados to Modern Mexican dishes a la New York.

Asian demographic influence has a long and storied past in Mexico: Filipinos came through the Pacific trade on huge Galleons, Chinese communities worked to build Mexican railroads, and Japanese settlers found work on coffee plantations. Mexico’s culinary heritage is no stranger to this influence—dishes have benefited from their steaming, drying and salting techniques, as well as the spices. Join me as I explore the heritage of Asian cuisine in Mexico through dishes like Dried Shrimp Soup, Green Beans with Salted Peanuts and Chile de Arbol, Mexican-style Mongolian Beef, Spicy Tofu, and Sticky Rice Playero.

I will team up with fellow Mexico City native Chef Barbara Sibley at her restaurant, La Palapa Cocina Mexicana, to prepare a home-style Mexican lunch for members of the New York Women’s Culinary Alliance. I will also talk about the menu and Mexican food in general.

The Chew Family, Mario Batali, Carla Hall, Michael Symon, Daphne OzClinton Kelly, and Evette Rios, could not have been warmer, kinder and more generous when I came to visit! They hosted a most fun Mexican episode. I brought them the Garibaldi’s for a treat, and Mario and Carla made the most scrumptious torta, The Pepito, with me.

I had such a nice time personalizing the Scribble cookies for the Today Show crew, rolling out the Anise Seed Ropes, and making the gooey dough for the Piggies with Al Roker on the Today Show.

I had such a lovely tome visiting the Today Show, their food prep team is beyond amazing and the cast is so friendly and oh so much fun.

Here is a clip of the cooking segment, where we made three totally different recipes with corn: the wild and fun Crazy Corn, a chunky, hearty and fresh Chop Chop Salad, and a comforting Corn Torte that you can top with Poblano Rajas.
