I stopped by the Today Show to make a few of the avocado snacks we’ll be eating in my house for the Super Bowl. With some help from Hoda Kotb and Kathie Lee Gifford, we ended up with quite a spread: Garlic Shrimp, Fennel and Orange Guacamole; Avocado, Roasted Asparagus and Cherry Tomato Salad; and Salmon topped with Greens, Bacon and Avocado. I always have so much fun being a guest on The Chew. This time, I made my Bricklayer-Style Tacos with Daphne Oz.

In the first clip, we make the filling (I think they liked the bacon in it)…

In the second clip, we assemble our tacos on fresh tortillas, top with some avocado slices, and eat…

Want to try some, too?

I was so proud to join the ONE Campaign and chef’s Andrew Zimmern, Hugh Acheson, and Nina Compton on Capitol Hill, where we advocated for bringing energy access to 50 million people in sub-Saharan Africa. I also appeared with Tom Hart, US Executive Director of ONE, on News Channel 8’s “Let’s Talk Live” to talk about the initiative.

Did I mention I love doing things in Spanish? I got up early to make some sweet treats for Fall on Telemundo 47 Primera Edición, with some help from host Odalys Molina. If you missed us, watch the clip right here…

I’ve teamed up with my good friend Sally Swift, co-creator of The Splendid Table, on a podcast series we call “Big Appetites” because, let’s be honest, we both love to eat! It’s part of American Public Media’s Infinite Guest podcast network where you can listen to experts and enthusiasts chat about comedy, food, culture, sports, music, and so on. I am thrilled and honored to have been invited to join them.

In “Big Appetites,” Sally and I are talking about our favorite topic, food (of course!), and whatever else comes to mind.

I spent the morning at the Today Show, cooking up a couple of my favorite recipes for summer with Natalie Morales and Al Roker. We made Lime-Rubbed Chicken and, to go with it, Mexican Red Rice.

I’m beyond honored and delighted to have been able to cook for the Cinco de Mayo celebration at the White House with Chef José Andrés and his incredible team from Oyamel. I had the opportunity to meet President Barack Obama, take an official photo, and chat with him. I was almost speechless! (You know that’s very uncommon for me.)

I was excited to visit CNN Español on Cinco de Mayo. I spoke to Juan Carlos López about the significance of the holiday on both sides of the border, and how it is celebrated in Mexico versus the U.S., on Directo USA. Watch the clip here…

It was a lot of fun talking to Gustavo Arellano, who writes the syndicated column “¡Ask a Mexican!” and author of Taco USA, about foods that have been shared across the U.S.-Mexico border. If you missed us on the radio, listen here…

I’m always saying nopalitos could be the next big thing, and here I talk to someone who thinks so, too. Sam Brasch wrote the article, “A Prickly Question: Could Cactus Be the Next Kale?,” for Modern Farmer magazine. Listen in on our discussion…
