“There’s a national shortage of eggs in the country that is the world’s biggest consumer of eggs (350 per person per year). It’s causing prices to rise, and chefs are having to get creative says Patricia Jinich, host of the popular cooking program Pati’s Mexican Table…”

Holly Morris and the Fox 5 News crew threw a fiesta at my house this morning for Mexican Independence Day, which is this Saturday, September 15. This is Mexico’s Fourth of July!

We started by gathering a few chiles from my backyard garden. And Kelly, from Capital Decor, made some gorgeous chile arrangements to spice up my kitchen.

Then, I make Rabo de Mestiza with Holly. Rabo de Mestiza is a dish where eggs are poached in a tomato and poblano sauce. It’s perfect for an Independence Day brunch because the white eggs, green chiles and red tomato sauce represent the colors in Mexico’s flag.

Not only did I have a fascinating conversation about Mexican cooking and culture with Gabriela Zabalúa-Goddard and José López Zamorano — hosts of AARP‘s “Viva su Segunda Juventud” radio show for SiriusXM’s ¡Inspírate! channel 145 — I also got to try José’s wife’s Mole from Puebla!

I was so excited to be back on The Chew with the amazing Chew family! I had a lovely time making my Chocoflan alongside Mario Batali and Daphne Oz.

The Chew Family, Mario Batali, Carla Hall, Michael Symon, Daphne OzClinton Kelly, and Evette Rios, could not have been warmer, kinder and more generous when I came to visit! They hosted a most fun Mexican episode. I brought them the Garibaldi’s for a treat, and Mario and Carla made the most scrumptious torta, The Pepito, with me.

Here is a clip from the show when we talked a bit…

Here is where we made the Pepitos! Did you know Mario Batali speaks perfect Spanish?

I had such a nice time personalizing the Scribble cookies for the Today Show crew, rolling out the Anise Seed Ropes, and making the gooey dough for the Piggies with Al Roker on the Today Show.

Here is a clip of the cooking segment, where we made the three different cookie recipes: the playful Piloncillo Piggies, the elegant Anise Seed Ropes and the fun chocolaty Scribbles.

I had such a lovely tome visiting the Today Show, their food prep team is beyond amazing and the cast is so friendly and oh so much fun.

Here is a clip of the cooking segment, where we made three totally different recipes with corn: the wild and fun Crazy Corn, a chunky, hearty and fresh Chop Chop Salad, and a comforting Corn Torte that you can top with Poblano Rajas.
